I talk a lot- both of my jobs require a bubble-machine-at-a-trashy-club amount of bubbles. I work in outside sales and customer support with -occasionally not so happy- customers. The first bullet point on both job descriptions should have read “Ability to throw on a cheerleader glow and sweet chatter at the drop of a hat”. This can lead to some really interesting conversations and networking opportunities – that as well as a ton of requested first dates.
I was working at a Whole Foods recently doing customer education and sales with the vegan protein supplement I represent and came across a very sweet woman who I instantly engaged with. Our bubbles seemed to mesh into one oversized super bubble- this chick had personality and charm up the wazoo. We exchanged digits after learning that we both were food and nutrition bloggers- to my extreme excitement.
Later that same week we did the first-date-smiley-face-laden texts- planning a day to cook together and create a co-blog post for both of our blogs. After checking out her website and blog I realized I was coming up on an awesome new friendship and mentorship opportunity, she’s successfully running a passionate food and nutrition blog while making it her full time job.
I was inspired and so excited to learn from this gal that had already dug deep into the social media world- filming cooking shows and demonstrations while also having intimate relationships with her fans and weight loss customers. Check her out at Christie Miller’s EatTrainWin
When the day finally rolled around I was elated to finally get a day of learning from a pro with such a heart for teaching and a willingness to inspire. We spent the afternoon laughing hysterically and trial-and-erroring in her beautiful and pristine kitchen.
The plan was a Facebook Live post of us demonstrating the most glorious Jackfruit Tostadas and an even more heavenly Banana Ice cream Dessert. The filming seemed to fly by as we were having so much fun together. Following the limelight we dined on her sweet patio with her beautiful black lab and slurped our “Not- So -Chunky-Monkey” ice cream down while sharing story after story forming a sweet new friendship.
Lovelieats made it onto the big screen- or your laptop screen at least. A big box was checked as I’ve spent the better part of my last 25 years of life perched meticulously in front of cooking show after cooking show wishing it was me chopping and dicing and giggling into a camera. Rachel Ray was one of my favorites while Anthony Bourdaine’s travels with food never fail to inspire me. This was such a delightful experience and I cannot wait to do it again.
Jack Fruit Tostadas
Ingredients- Four servings
- Chia Seed Wraps ( or tortilla tostada shells work great too!)
- Shredded Romaine- or your other favorite lettuce!
- 1 Package of seasoned Jackfruit – I chose the Tex Mex variety (Sauteed)
- 1 15 oz can of corn
- 1 15 oz can of black beans
- 1 cup sliced cherry tomatoes
- 1 sliced Haas avocado (1′ slices)
- 1 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp chili powder
- 1/2 Juice of a lime
- 1/2 cup chopped cilantro
1.) Slice your Chia Seed wraps into two pieces and brush a tsp of cold water and lime juice over both of the slices, lay them criss-cross in a tostada shell pan. Toast the tostada in the oven for 5 minutes at 400 degrees fahrenhiet.
2.) To make the “Cowboy Caviar” Drain and rinse the corn and black beans. Mix the chopped cilantro, spices, canned black beans and corn as well as the sliced cherry tomatoes in a bowl.
3.) Remove your tostada shell from the oven and layer in it the lettuce, Cowboy caviar, sauteed jackfruit and sliced avocado! Enjoy!
“Not-So-Chunky-Monkey” Banana Ice Cream:
Ingredients- 4 servings
- 4 Ripe and frozen bananas
- 3 tbsp chunky natural peanut butter
- 1/4 cup mini dark chocolate chips
1.) Break the frozen bananas into forths and place into a food processor- blend for about 3 minutes until smooth.
2.) Scoop the pureed bananas into a glass dish, fold the peanut butter into the icecream- allowing beautiful ribbons to form and not overly stirring.
3.) Sprinkle the chocolate chips over the top. Set in freezer for about an hour to set and harden.
Ingredients- Serves four
- 1/2 cup cocoa powder
- 4 tbsp coconut oil
- 2 tsp vanilla
- 1.5 tsp liquid stevia
1.) Mix ingriedients and drizzle over iced cream for a hardened chocolate shell!
